Bring half a pot of water to simmer. put the egg yolks in a stainless steel mixing bowl and place it over the pot of simmering water. Add the vinegar to the egg yolks and whisk vigorously over the pot until you get a thick consistency, slowly add the clarified butter and continuously whisk til all the butter is mixed in. take it off the heat, adjust the seasoning with salt and pepper. Set aside.
Grill the salmon on both sides and cook to your liking. Serve with hollandaise sauce and a sprig of dill on top.
