Chilli Mussels (by Chef Paolo)

Using a heavy base pan, sauté the garlic and onion until soft, add the half shell mussels and deglaze with red wine. Add diced tomato, chilli, salt & pepper. Put the lid on bring to boil and let it simmer for 5 minutes. Sprinkle chopped parsley and serve with crusty bread.
